About Us

The School of Natural Wine is a labor of love started by Fabio Bartolomei & Carlos Rodríguez-Santamarta initially to revive abandoned vineyards and land in the mountains of Sierra de Gredos. After bringing vines back to life, they saw an amazing opportunity to teach natural wine lovers to be natural wine makers, all the while educating on sustainability in wine-making.

Students will gain knowledge of the entire natural wine production process; including working soil, growing crops, vinification, tasting & marketing leaving them with the tools to become a winemaker or natural wine entrepreneur.

Our Directors

Fabio Bartolomei

Fabio, creator of Vinos Ambiz, produces the most unique wines, appreciated worldwide as single pieces of art. He allows the nature and the grapes speak for themselves.

Carlos Rodríguez-Santamarta

Food Material is the number one importer and reseller of Spanish natural wines in Germany. Carlos' vision is for Natural wine to be shared as far and wide as possible, to reawaken it's traditional methods and to continue to grow this industry for a sustainable and delicious future.

Our “Campus”

Located in Sierra de Gredos, Spain, future winemakers will experience the terroir of this mountainous region and understand how all environmental factors impact every last sip.

The vineyards are over 50 years old, the oldest vines were restored to their former glory in 2022 and have already helped to produced thousands of bottles.

In addition to our vineyards, we also have a historical cellar and winery for students to learn the entire winemaking process practically.

Accommodation is not provided, though we will assist with daily transport from private housing to the vineyard. (cost incl.)
