Soil, Grapes & Wine takes place primarily on the Vineyard and Winery where students learn practically.
Marketing & Senses are taught as class either on-site or online.
Soil. Grapes. Wine.
The vineyard is the heart and soul of Natural wine. Each and every environmental factor can determine what's ends up in the bottle. We invite future winemakers to study the soil, vines and wine production on site at our vineyards and in the dedicated winery in Sierra de Gredos. Students will have first hand experience in creating their first bottles of wine. Of course, scheduling of each element is dependant on seasons, weather and tasks necessary at the time.
In Soil, Grapes & Wine students can opt to participate for 1 Day, 1 week, 2 weeks or 4 weeks for dates of their choosing. Scheduling of each element is dependent on the seasons, weather and tasks necessary at the time. Students who wish to attend for 4 seasons will have the opportunity to create and bottle their own wines (minimum 200 bottles).
Soil
Students will learn about different types of soil, how to keep it healthy, balanced, fertile and sustainably productive; including management of grass, plants, rocks and stones, ploughing and composting.
Grapes
This section covers different techniques of pruning, green pruning (thinning) and all aspects related to harvesting. Students will gain understanding of the especially deciding on the date of harvest.
Wine
The full winemaking process from crushing, de-stemming, pressing, and fermentation to bottling, labelling and shipping is covered over the course of the year.

Four Seasons:
Completion of the entire wine-making process from start to finish. Students will create their own wine.

Tasting.Marketing.
These modules focus on developing tasting skills, and on understanding the business of natural wine, thus preparing students to work in the world of natural wine. Both modules will be taught by wine-makers and other professionals in the natural wine industry, from Spain and abroad.
Students can opt to participate for either 1 day or 1 week during the months of August or November. Dates are not set and can be agreed on upon request. There is a possibility to attend online.
Tasting
Students will develop their senses for working with natural wine and understand core tasting elements. Aspects of this module include the art of food pairing and how to build a wine list.
Marketing
Students will learn how wine goes from vineyard to winery to market to table. We will cover marketing, distribution, different business models and building a business plan. This module prepares students for working in all areas of the wine industry.

Basic overview of the natural wine industry as a whole.
